So, I was talking-up my BBQ corned beef since my show last Friday. Do you want to see the fruits of my labor?

I was up at 5:30am to fire up the smoker and get the brisket on…

The smoker is loaded and ready to go

The smoker is loaded and ready to go!

And the brisket is all seasoned.

And the brisket is all seasoned.

In the meantine, I did some show prep and went on the air. When I came back, the smoker was crankin’!

Now we're smokin'

Now we're smokin'

And under the dome…

So far, so good

So far, so good

Right after I picked up my daughter from school, it was time to check the brisket.

Almost there...

Almost there...

12 hours after putting the brisket in the smoker, it was time come out…

Done and ready to carve!

Done and ready to carve!

The thing I love about smoking a brisket (corned beef or plain) is the overwhelming juiciness and tenderness.

Juicy and tender BBQ corned beef goodness

All this hard work makes a guy thirsty.

A couple of Guinness draughts

Ah, slices of heaven!!

A traditional Irish celebratory dinner!

Thanks for listening to the BBQ special and any other of my shows. Whether it’s politics, news or great food, you always walk away satisfied!
